What we’re eating this week…
Sunday we made pulled pork in the crockpot so we’ve got that for some easy leftovers this week. I also made Sheppard’s Pie on Saturday and we’ve got a bit of leftovers of that as well! I truly enjoy making one bigger, hearty, time consuming meal on the weekend that we can enjoy again during the week. We also always have easy things like tacos or pasta on our weekly menu 😉
What I’m reminiscing about…
This time last year we were just waiting on a precious little boy to make his arrival. January 29th was my due date and we didn’t get to meet our Ro until February 11th!

All the little Valentine’s Day touches around our home <3
What we’ve been up to…
We’ve been enjoying lots of time together around home with not a whole lot of plans.
What I’m dreading…
Snow. Trying to remain hopeful that we don’t get a blizzard for Ro’s party like the day he was born so that it won’t affect travel for our guests.
What I’m working on…
Working on the details for Ro’s first birthday party as well as his one year pictures!
What I’m excited about…
Ro’s upcoming first birthday!!
What I’m watching/reading…
Grey’s Anatomy returned so I’m keeping up with that. My husband & I have almost finished the most recent season of The Marvelous Mrs. Maisel and I also just got up to date with all of the season of Call the Midwife on Netflix! Still mostly audiobooks over here for me, I read We Met in December and One Day in December recently and LOVED them both!!
What I’m listening to…
I’m listening to quite a bit of Emily Scott Robinson lately, hoping we get to see her live soon!
What I’m wearing…
I can’t quit my Nickel & Suede earrings! Every single day I look forward to which pair to wear and I kind of feel like I’m cheating on my other earrings lol
What I’m doing this weekend…
We’ve got another weekend of no plans! I’m sure we’ll get out to do something, we’ll just see where the weekend takes us…
What I’m looking forward to next month…
Valentine’s Day since I’ll be spending the day with Ro, plus his birthday party!
What else is new…
We got this new chopper and after the first use I was in LOVE! I oddly look forward to chopping things for dinner lol 😉 I think it is a great price, easy to use, and super easy to clean too.
I can’t believe Ro is already going to be a year! He is so so adorable- love seeing his pics- yeah for Mrs. Maisel- big fans over here too 🙂

Love your pictures and what’s going on in your life…can’t wait to read details of Ro’s first birthday celebration. I, too, love to cook multi-portion meals on the weekend and have leftovers during the week; so grateful my hubby doesn’t complain about leftovers. 😄
Still a couple weeks away from the birthday party but it is coming up quick! Leftovers are so handy, couldn’t get through the week without them lol, plus sometimes leftovers taste even better 😉

I so just love seeing pictures of your sweet family. I love hearty meals over the weekend like that too! I grew up eating that way! Tacos, spaghetti, chili are all weekly staples of ours too!!! 🙂
