Hello Wednesday 🙂 I’m joining in for another Ladies Who Link with Pink Lady, A Gal Named Al, Mom’s Coffee Date, Coast to Coast, and Mommy in a Nutshell! We’re sharing our favorite weeknight dinners, I can’t wait to follow the others and read all the great ideas!
Â
First up is burritos, the true way to my heart! 😉 They come together quick and can be made with chicken or beef, we almost always have what we need on hand so this is definitely a go meal for us. Fry up a couple tortillas, cook up some meat, and chop any veggies. Top with taco sauce, sour cream, cheese, or salsa. Easy meal that we can both personalize to our tastes and there are always leftovers to take for lunch the next day and eat with tortilla chips! It’s a 2 meal deal lol
Â
I always keep this veggie pasta on hand for a quick, easy, last minute meal. Sometimes we saute up some asparagus or tomatoes or zucchini and other various veggies to add in. We’ll either top with marinara sauce, basil pesto, or just some olive oil and Parmesan depending on what we’ve got. Plus since the pasta is made from veggies I feel a little bit better about eating it 😉
Â
We found this Orange Chicken at Trader Joe’s and haven’t looked back! We usually just serve it over some type of Asian noodle, but any noodle, rice, or even quinoa would do! To make it a little healthier I chop up carrots, green beans, and peppers to add in the mix like our own little stir fry.
Â
Lastly, I love a pizza from the grill. I’ll either make a batch of this dough to keep on hand in the freezer (which is usually enough for 8 personal pizzas) or we used to use packaged naan bread too, most recently though we’ve fallen to this crust found at Kroger.
Â
Chop some peppers, onions, mushrooms, any veggies or toppings really (you might notice my theme for most meals is to add as much veggies as possible, always trying to sneak those servings in!) and top with any cheese you’ve got on hand. We really like this pizza sauces best!
