It has been far too long since I’ve documented a day in our life! I did a couple last year that you can see here & here, but I thought it was time to have an updated one before our daily lives really change in January when Baby M arrives;) Prepare for picture overload, here is a look at our Monday from this week…We start the day off pretty much the same as we have for the last few years, the alarm goes off at 5:32 am.
We both shower/get around, while I’m doing my makeup Hal sits just outside the door so sweetly & then its time for breakfast, of course the beags get fed first & sent outside.
Packing our lunches & then eating breakfast ourselves – I promise I usually eat something healthier but it was Monday & Franken Berry cereal is my weakness in October π
Off to work we go!
I work for a manufacturing services company, at my plant we mostly manufacture circuit boards/electronics for the healthcare industry – sounds glamorous right π As an Industrial Engineer I work on a wide variety of projects from plant layouts, to process improvements, and tracking metrics as well. My days are filled with a lot of AutoCAD, Excel, and collaborating with others.
After work I am welcomed by these crazies! Hal ALWAYS greets us with a wagging tail & a toy in his mouth while Hank is loud & rambunctious and of course immediately wants outside!
I unpacked my lunch & pulled out the supplies to roast a chicken. Then Hank made his way back inside and was acting playful so I played around with them for a bit. Each beag always wants whatever toy the other has lol!
I got the chicken ready & put that in the oven to cook for a couple hours. I didn’t use a specific recipe…one whole chicken, cut an apple, a lemon, an onion, some rosemary, garlic, butter, and salt & pepper. Cooked at 475F for about 15 minutes and then turn down to 350F to cook 15 minutes for every pound or until it reaches an internal temp of 165F.
I fed the beags dinner (Hank gets real excited to eat lol) and then my husband walked in just after I put the chicken in the oven, but since I was just making that so we’d have it for dinners later in the week we got started on dinner for that night together. Sweet Potato & Bean Burritos – again no recipe, just dice some sweet potato, we also added red pepper & onion, and cook; a can of refried pinto beans, and any other toppings you’d like.
I took the beags for a walk but forgot to snap a pic because it was COLD! Then took the chicken out of the oven to let it cool & put it away in the fridge for easy dinners later this week.
Monday nights Ron plays video games online with a couple of his buddies, so I got cozy with a book with Hank & Hal nearby.
That night we were all tucked into bed by 9pm!! Usually we start our bedtime routines around 9 but we were feeling a little tired & opted for rest so we were done with our nightly routines & in bed early!
I also had lit a candle on Monday night for Pregnancy & Infant Loss Remembrance Day – participating in a Wave of Light where everyone was encouraged to light a candle at 7p for one hour so across time zones there would be a wave of light. While we have not experienced the loss directly ourselves, we know several who have. So we lit a candle and said a little prayer for those babies, mommas, & daddies <3

Sounds like a busy but productive Monday. Your work sounds fascinating. I also pre-cook some meals/meats for later in the week. I need to try your sweet potato burrito recipe! Woof and Howl to your beags…

Ha, work can sometimes be intriguing – I like that I get to work on a wide variety within our plant so things are always changing for me. Yes, sweet potato & bean burritos have been one of our favorite ways to mix up Mexican night! Thanks Shannon π
